Winter salad with apple, pomegranate and walnuts.

A fast and fresh lunch or supper with the delicious crunch of Royal Gala apples. Add a handful of grilled chicken or feta cheese for extra flavour.



8 tbsp extra-virgin olive oil

3 tbsp lemon juice

sea salt and ground black pepper

couple of large handfuls of mixed salad leaves

2 large handfuls of radicchio sliced

4 tbsp chopped toasted walnuts

seeds from 1 pomegranate

Royal Gala apples cored and sliced thinly



For the dressing, pour the olive oil and lemon juice into a bowl, season with sea salt and pepper and mix together with a fork.

Place the salad leaves with the remaining salad ingredients in a large bowl, pour over the dressing and toss everything together, then serve immediately.
