This is a tasty and healthy recipe that brings together a range of seasonal ingredients including our delicious British Royal Gala apples.
1 British Royal Gala apple, cored and thinly sliced
½ stalk celery chopped
100g cooked chicken breast, skinned and chopped (optional)
handful fresh rocket leaves
2 egg yolks
1 tsp Dijon mustard
290ml vegetable oil
Juice of one lemon
salt and pepper
Put all the salad ingredients into a large bowl and toss together so they are well mixed. To make the dressing, put the egg yolks and mustard into a mixing bowl and whisk together. Slowly add the vegetable oil, whisking continuously until all the oil is mixed in. Whisk the lemon juice into the mixture and season with salt and freshly ground black pepper. To serve, mix the dressing with the salad and serve.
