Roasted Apples with Figs
4 Bramley apples, cored but not peeled and cut into large cubes
6-8 fresh figs, cut into quarters
200ml orange juice
1/2 tsp cinnamon
1/4 tsp salt
150g soft brown sugar
170g pecans, chopped
2 tbs butter
Heat the oven to 190c. In a bowl, mix together the apples, figs, orange juice, cinnamon, salt, brown sugar, pecans and raisins.
Place in a casserole dish and dot on the butter.
Bake for 30 minutes, then take out and mix together again before placing it back in the oven for another 30 minutes.
Let it rest for 10 minutes before serving warm with sour cream or vanilla ice cream.
