Easy apple muffins - a tasty snack for everyone to enjoy.
270g Plain flour
4 tsp Ground cinnamon
½ tsp Salt
4 tsp Baking powder
50g Caster sugar
1 tsp Vanilla extract
3 British apples peeled, cored and cut into small cubes
Preheat the oven to 200°C / gas mark 6 and line your muffin tin with 12 cases. Sift together the flour, cinnamon, salt and baking powder.
Whisk together the egg, sugar, milk, vanilla extract and melted butter and then add the dry ingredients to the egg mixture and fold together with a large spoon. Then fold in the apple without over mixing. Divide the mixture between the 12 muffins cases and bake for 20-25 minutes.
