A tasty summer salad, serves two.
4 Spring onions
Half a cucumber
Fresh basil leaves
Selection of red leaf and crispy green lettuce leaves
3 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
Half a teaspoon Dijon mustard
Salt & pepper to taste
50g chopped toasted pine nuts
1. Chop all of the salad ingredients together finely and place into a large bowl.
2. Mix all of the dressing ingredients together and pour over the salad and mix thoroughly.
3. Garnish with the toasted pine nuts.
