British Conference Pear and blue cheese salad – a tasty lunch or simple supper to enjoy.
4 x British Conference Pears sliced lengthways into 1cm slices
2 x tbsp olive oil
1 x tbsp white wine vinegar
1 x tbsp honey
250g mixed salad leaves, washed
150g blue cheese, such as Stilton or Dolcelatte crumbled
1. Put the pears in a bowl and coat with 1 tsp of the olive oil.
2. Heat a griddle pan, then cook the pears allowing 30 secs- 1 min on each side then put to one side to cool.
3. Mix the remaining oil, vinegar and honey together in a bowl and then toss in the cooked pears, leaves and cheese, divide between 4 plates and drizzle with surplus dressing.
