An easy, healthy and very tasty soup to make with seasonal fresh produce.
2 x tbsp olive oil, plus extra to serve
1 x onion, peeled and finely chopped
500g purple sprouting broccoli, cut into small pieces
2 x British Conference pears, peeled, cored and roughly chopped
750ml vegetable stock
50g blue cheese, crumbled
Heat the oil in a saucepan over a low heat. Add the onion and cook, stirring occasionally, for 5 mins until soft. Add the broccoli, pears and vegetable stock and bring to the boil. Cover and simmer for 10-12 mins or until the broccoli is soft. Taste and season as needed.
Blitz the soup until smooth and put into four serving bowls and crumble on the top of each some of the blue cheese.
