Breakfast yogurt with apples and walnuts.

A great start to your day and mix apple with a range of toppings.

 

Ingredients:

240ml plain full fat Greek yogurt

120ml double cream

1 tablespoon runny honey

1 tablespoons butter

2 early eating apples such as Discovery, cored and chopped into small 1/2-inch cubes

1 tablespoon caster sugar

Pinch of ground cinnamon

Some toasted and chopped coarsely walnuts to garnish

 

Method:

Combine the yogurt, cream, and honey in a bowl, and beat vigorously with a hand mixer until the mixture thickens and forms soft peaks. 

 

Warm the butter over a medium heat and add the apples and 1/2 tablespoon sugar. Stir well and cook the apples for 6 to 8 minutes, until they just begin to soften. 

 

Once softened, sprinkle the apples with the remaining sugar and the cinnamon, and cook for an additional 2 to 3 minutes. Remove from the heat and let sit for 5 minutes to cool slightly.

To serve, spoon a generous serving of whipped yogurt into each of the four bowls and top with warm apples and toasted walnuts.
